APPLE CIDER ROSEMARY SLOW COOKER PORK LOIN

This is one of our very favorite cool weather recipes. Start the slow cooker on a Sunday morning and let the autumn aromas fill your home during a long day of relaxing with your family. 

APPLE CIDER ROSEMARY PORK LOIN

Ingredients

  • 1 boneless pork loin roast
  • Salt and pepper
  • 2 cups apple cider
  • 3-4 sprigs fresh rosemary
  • 1/4 cup cornstarch
  • 1/4 cup water

Instructions

  1. Trim pork loin of any excess fat. Season all over with salt and pepper. In a nonstick skillet, brown pork for on med-high heat about 4 minutes on each side until slightly browned on the outside.

  2. Pour 1 cup apple cider into slow-cooker. Place 2 sprigs of rosemary in slow-cooker. Top rosemary with the pork and place remaining rosemary sprig(s) on top of pork.

  3. Cover and cook on low for 5-6 hours. Remove meat and keep warm.

For Gravy

  1. Strain cooking liquid from slow cooker and skim off fat. Pour 2-1/2 cups cooking liquid into a saucepan. 

  2. Combine cornstarch and water until smooth. Stir cornstarch mixture into cooking liquid. 

  3. Bring to a boil. Cook, stirring constantly for 2 minutes or until thickened. Slice pork and serve with gravy.
