BISCUITS AND SAUSAGE GRAVY

This recipe is a family favorite of ours and has become our traditional breakfast on Christmas morning. As you know, I am not much of a baker, so I rely on the grocery store for pre-made biscuits to bake up in the oven! Or if you’ve got a great bakery (or even fast food joint!) nearby, grab some fresh biscuits and save yourself a ton of time!

SAUSAGE GRAVY

This gravy begs to be served over fresh, hot biscuits! I gladly accept help from the grocery store for this one and buy and cook pre-made biscuits. We love pepper, so I go pretty heavy on the freshly cracked black pepper!

Ingredients

  • 1 pound ground breakfast sausage mild or sage flavor
  • 1/3 cup all-purpose flour
  • 4 cups whole milk
  • 1/2 teaspoon dried sage (if sausage does not include sage)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon seasoned salt (we like Lawry’s)
  • 2 teaspoons freshly ground black pepper more to taste

Instructions

  1. Break up and brown the ground sausage over medium-hight heat in the bottom of a heavy pot. Let brown in a single layer to allow the meat to caramelize.

  2. As the meat is browning, stir in your sage (if using), thyme, onion powder, seasoned salt and black pepper.

  3. Once fully browned, sprinkle the flour in, bits at a time, stirring to combine as you go. Once all the flour is in, keep stirring and let cook for one more minute.

  4. Gradually pour in the milk. KEEP STIRRING CONSTANTLY! Scrape the bottom of the pot to release and incorporate the browned bits.

  5. For the next 10 minutes or so, keep stirring the gravy until it thickens to your desired texture. If your gravy seems too thick, add splashes of milk until it’s perfect. 

  6. Taste to be sure the seasoning is to your liking. Finish with another sprinkle of freshly cracked black pepper!

  7. Serve the hot gravy over fresh, hot biscuits and enjoy!
