GROUND TURKEY RAMEN NOODLES

As with many of my recipes, this is more of a method than hard and fast rules. Adapt this to whatever ground meat, veggies and sauces you enjoy and have on hand. This is what worked for us, but use this as a guide to make what works best for you and your family.

GROUND TURKEY RAMEN NOODLES

Ingredients

NOODLES

  • 3 3.5 oz packages dried Ramen noodles, any flavor one flavor packet reserved, two discarded
  • 1 TBSP toasted sesame oil
  • 1.5 lbs ground meat turkey, beef or chicken
  • 1 ramen flavor packet
  • 1 small green pepper chopped
  • 1 small onion chopped
  • 1-3 cloves minced garlic to your taste
  • 1 TBSP grated ginger

SAUCE

  • 1/2 cup beef stock
  • 2 TBSP soy sauce
  • 1 TBSP rice wine vinegar
  • 1 tsp fish sauce
  • 1/2-1 tsp sriracha to taste

GARNISH

  • green onions chopped
  • sesame seeds
  • sriracha drizzled
  • jalapenos pickled or fresh

Instructions

FOR THE SAUCE

  1. Whisk together the beef stock, soy sauce, rice wine vinegar, fish sauce and sriracha. Set aside.

FOR THE NOODLES

  1. Cook the Ramen noodles in boiling water, 3-5 minutes, omitting the flavor packets. Rinse the noodles under cold water and set aside to drain.

  2. In a large pan, heat the toasted sesame oil over medium heat and add the ground meat. Sprinkle the one reserved flavor packet over the meat. Cook and break apart the meat until it is brown on the outside but remains pink on the inside.

  3. Add the onion and green pepper and cook until the meat is browned all the way through and vegetables have softened.

  4. Stir in the garlic and ginger and cook for one more minute.

  5. Pour the sauce mixture into the hot pan and deglaze by scraping the browned bits off of the bottom and sides of the pan. Allow the sauce heat through, about one minute.

  6. Add the ramen noodles and toss to coat in the sauce warm through while distributing the meat and veggies.

  7. Serve warm and garnish with desired toppings. Enjoy!
