SPRING PASTA SALAD

This Sunday, we’ll face our first holiday under Quarantine. While I’m sad to miss out on some of our beloved spring traditions, I am actually excited about the chance to create new ones with my family. This Easter is not about perfection, it’s about being together and enjoying a simple meal with the people you love. Unfortunately, due to the current state of the world, some of our homemade Easter favorites just won’t be possible this year. So now I’m looking for lovely options to brighten our holiday table that don’t require too many ingredients. That’s why this Spring Pasta Salad from She Likes Food will be a perfect side dish for our Easter Dinner. It calls for only a couple of fresh vegetables and features a vibrant dressing made from ingredients I already have in my fridge and in my pantry. It is simple to prepare but elegant enough for any holiday meal!

As always, feel free to sub out the watercress with whatever you have on hand. Use arugula, sprouts, chopped kale or spinach, or omit altogether. Don’t stress about fresh lemon juice if you’ve got the bottled version in your fridge. You can swap out the veggies based on what you have available and you can make the dressing in advance! Keep it simple.
