HUMMINGBIRD EASTER CAKE

Am I the only one who associates Hummingbird Cake with Easter? To me, the blend of pineapple and banana flavors calls to mind warmer weather, making it perfect for spring celebrations.

If you’ve never made (or tried) a Hummingbird Cake, you must start here, where the movement began. This is the original recipe submitted by Mrs. L.H. Wiggins of Greensboro, North Carolina in 1978 that went on to become Southern Living’s most popular cake recipe ever. Yes, ever.

Note – my kids enjoyed the flavor of this, but they were not fans of the nuts in the cake. They are cake traditionalists so the crunch threw them off a bit. If you’ve got picky eaters at home, you may want to keep that in mind.
