Besides the superfood benefits of spinach and kale, this salad is an excellent source of protein (chicken, eggs, chickpeas), fiber (apples, chickpeas), healthy fats (olive oil, chickpeas) and other vitamins and nutrients.
Basically – chickpeas are super good for you. Topped with my go-to dressing, Simply Dressed Balsamic Vinaigrette, this is a power house lunch.
35 years old and I still can’t ever spell vinaigrette correctly on the first try.
- Spinach, Kale or some of each
- Grilled chicken or other lean meat
- Chickpeas, drained and rinsed
- Hard boiled eggs, chopped
- Apples, chopped
- Red onions, thinly sliced and caramelized in olive oil
- Simply Dressed Balsamic Vinaigrette
