SPICY TURKEY MEATLOAF

This simple meatloaf is a breeze to prepare. The level of spice is up to you. If you or your kids aren’t into it, you don’t have to use the sriracha at all! 

SPICY TURKEY MEATLOAF

Ingredients

For the meatloaf:

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 1 – 2 cloves garlic minced or pressed
  • 1 – 1.5 lbs lean ground turkey
  • 3/4 cup panko breadcrumbs
  • 1 large egg
  • 1/4 cup chicken broth
  • 1 tbsp Worcestershire sauce or soy sauce
  • 1 tbsp sriracha (optional)
  • 1/2 tsp seasoned salt (or table salt)
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp paprika

For the Glaze:

  • 1/2 cup sweet BBQ sauce
  • 1/2 cup ketchup
  • sriracha to taste

Instructions

For the Meatloaf:

  1. Preheat oven to 350°.

  2. Melt olive oil in a skillet over medium heat. Add onion and garlic, cook until translucent stirring occasionally (approx. 8 min.). Remove from heat and allow to cool.

  3. In a large bowl, combine onion and garlic with breadcrumbs, egg, broth, Worcestershire sauce, sriracha and seasonings. Stir until evenly combined. 

  4. To the bowl, add ground turkey. Using your hands, knead turkey and onion mixture until just combined. Do not over work the meat or it will become tough.

  5. Spray a 9″ x 5″ loaf pan with cooking spray. Press turkey mixture into the loaf pan. Or shape meat mixture into a 9″ x 5″ loaf and place on a sprayed baking sheet.

For the Glaze:

  1. In a small bowl, combine bbq sauce, sriracha and ketchup. Spread sauce over the meatloaf.

  2. Bake for 40 minutes or until the center of the meatloaf reads 160° degrees.
