ORCHARD KALE SALAD

My mother in law first introduced me to this idea of a chopped kale salad and I think it’s brilliant! She tosses hers with poppy seed dressing and I love mine with balsamic vinaigrette. This simple salad is sweet and refreshing yet hearty and healthy. And it can be made in a million ways! Take this opportunity to use up your fruits and veggies, nuts from your pantry and finish off bottles of salad dressing in your refrigerator. For an added protein boost, toss in grilled chicken or chickpeas. You’ll never enjoy kale more!

To save time, toss with a fresh, store-bought poppy seed dressing or
balsamic vinaigrette though you can, of course, make your own! Since this salad is chopped into bite size pieces and filled with fruit, dare I say… it’s also kid friendly!

ORCHARD KALE SALAD

There aren’t strict ingredient amounts for this salad. Use the fruits and nuts as suggestions and build the salad to suit your family’s taste. Add grilled chicken or garbanzo beans for a protein boost.

Servings 8 people

Ingredients

  • 1 bunch kale
  • sweet apple chopped
  • red grapes halved or quartered
  • almonds, pecans or cashews slivered or chopped
  • veggies (tomato, red onion, cucumber, butternut squash, celery) chopped
  • dried cranberries or apricots
  • crumbled cheese (feta, blue or goat cheese)
  • garbanzo beans
  • grilled chicken chopped into bite size pieces

Instructions

  1. Strip kale leaves off of their tough stems. Using a sharp knife or food processor, finely chop kale into 1/2″ size pieces. 

  2. Combine kale with fruits, nuts and proteins of your choice! Toss with desired dressing and serve!
