ORCHARD CHICKEN SALAD

Chicken salad is one of my favorites in the warmer months and it’s a great way to use up extra fruits and veggies you have in the fridge. We always have grapes in the summer and I never know how to use up an entire bunch of celery! I take a huge assist from the grocery store and start with a rotisserie chicken.

As always – this is just a starting point! Feel free to substitute or omit any ingredients based on your preferences.

If you have little ones at home, or just like smaller pieces, I can’t recommend this little gadget highly enough. It quarters grapes and cherry tomatoes easily without making a huge mess!

ORCHARD CHICKEN SALAD

Ingredients

  • 1 rotisserie chicken white and dark meat, chopped or shredded*
  • 1/2 – 1 cup mayonnaise**
  • 2 stalks celery diced
  • 1 apple cored and diced
  • 1/2 cup grapes*** halved or quartered**
  • 1/4 cup golden raisins
  • 1/4 cup almonds, pecans or walnuts chopped

Instructions

  1. In a large bowl, combine all ingredients, starting with 1/2 cup of mayonnaise and increasing to your desired creaminess. Refrigerate and serve chilled.

Recipe Notes

*You can shred the chicken with a Kitchenaid mixer! Just place the larger chunks of chicken into the bowl fitted with the paddle attachment, set the mixer on low and watch it work its magic!

**Begin mixing with less mayo than you think you’ll need so you don’t over do it from the start. Gradually add mayo to make it as creamy as you’d like. After refrigerating, the chicken salad may absorb some, so you may also want to add a bit more before serving.
