*You can shred the chicken with a Kitchenaid mixer! Just place the larger chunks of chicken into the bowl fitted with the paddle attachment, set the mixer on low and watch it work its magic!
**Begin mixing with less mayo than you think you'll need so you don't over do it from the start. Gradually add mayo to make it as creamy as you'd like. After refrigerating, the chicken salad may absorb some, so you may also want to add a bit more before serving.
