GREEK TURKEY BURGERS

Ingredients

FOR THE BURGERS

  • 1-1.5 lbs ground turkey
  • 1 large egg
  • 1/3 cup panko breadcrumbs or any breadcrumbs you have on hand
  • 1/4 cup crumbled feta cheese
  • 1-2 handfuls fresh spinach finely chopped
  • 1 TBSP fresh dill finely chopped (optional)
  • 1 TBSP dried oregano
  • 1-2 tsp garlic powder to your tastes
  • 10 small whole wheat pita pockets or your preferred buns

TO GARNISH

  • tzatziki sauce*
  • hummus*
  • fresh spinach
  • tomato slices
  • fresh lemon juice

Instructions

  1. In a mixing bowl, combine turkey, egg, breadcrumbs, feta, spinach, dill (if using), oregano and garlic powder. 

  2. Use your hands to gently mix until just combined. Do not over-mix! The burgers will end up tough if you over-mix or abuse the turkey. 

  3. Form the meat mixture into 10 small patties (be sure they will fit inside your pita pockets!) or larger patties to fit the buns you're using.

  4. Cook the patties over medium-high heat, about 3-4 minutes on each side until well browned, or until internal temperature reaches 165°. Larger burgers make take longer.

  5. Cut sideways into the pita pockets and spread one or both sides with tzatziki sauce and/or hummus. Garnish with spinach, tomatoes and a squeeze of fresh lemon juice. Enjoy! 

Recipe Notes

*Store bought or fresh made tzatziki and hummus. Either one is fine!
